The Quickest Fried Rice
2- 4 cups cooked brown or white rice
1-2 tbsp. butter
1 package frozen peas and carrots, thawed
1 package frozen broccoli, thawed
1 can water chestnuts, optional
3 tbsp. soy sauce
1 tbsp. sesame oil
2 eggs, beaten
In a skillet, melt butter. Add thawed peas, carrots, broccoli, & water chestnuts and sauté for a couple minutes, until veggies heated through.
Add cooked rice, soy, and sesame oil. Stir.
Add eggs and let cook for 1 minute. Then, stir constantly until egg cooked through (additional 2-4 minutes)
Tips: Add whatever vegetables you like. For example, mushrooms, green onions, snow/snap peas, bell peppers etc. – Just use what you have! Serve with my Chicken Teriyaki and Siracha Cream
